som‧er‧sault, n. /ˈsʌmərˌsɔlt/

Named for the English county of Somerset. Much as the Scottish are known for raising their hands while dancing jigs and the Irish are known for lowering theirs, dancers from Somerset would incorporate a forward flip. This “Somerset vault” gained new life – after jigs faded from popularity – as a step in the process of making Cheddar cheese.
