Variant of German Essen (“food”) or the verb form essen (“to eat”). Related to essential amino acids – amino acids that are not created by the human body, and must be eaten. Given the necessity of eating, it is easy to see how the meaning of “essential” has drifted toward “necessary” or “required.”
